Kimchi Sour: A Unique Brew

One of our standout creations is the Kimchi Sour , a beer that showcases our commitment to bold flavors. Made with ginger, gochugaru peppers, and a lactic culture from two-year-old homemade kimchi, this brew captures the essence of traditional Korean fermented cabbage.

Our brewer, Jake Dworkin, takes the process a step further by steeping the wort with gochugaru peppers before kettle souring with our bespoke kimchi culture. This unique method allows the flavors to meld over two days, resulting in a beer that’s unlike anything else on the market.

“When we brew on Fridays, we let it sit over the weekend before bringing it to a boil,” Dworkin explains.

It has now become Dokkaebier’s best-selling beer. “[That beer] has such an impact as a flavor, brand, or name because there’s no such thing like that,” Lee says. “Every single person remembers [it].”

A Flavor That Lasts

The experience of drinking our Kimchi Sour is unforgettable. You’ll first taste a hit of umami from the sour lacto culture, followed by a savory tingle from the ginger and gochugaru peppers. It’s designed to be crushable and not overly sour. “If it hurts you, you can’t drink the whole thing,” Lee notes. “So I want it to still be crushable.”

Meet Youngwon Lee: A Visionary in Craft Beer

At Dokkaebier, we’re passionate about crafting unique flavors inspired by our Korean heritage. Our founder, Youngwon Lee, is a driving force behind our mission. Recently featured as one of the “15 People to Watch in Craft Beer in 2024,” Lee’s journey is one of innovation and cultural representation in the brewing industry.

Born in Korea and having lived in Guam, New Jersey, and California, Lee found his love for beer while working at The Booth, a Korean-owned brewery. After the brewery's closure in the U.S., Lee was determined to continue sharing his culture through craft beer.

“I realized I was the only Asian person at a beer festival,” Lee reflects. “If I were to create something new, I wanted to go all out, go even more Asian. I felt like that would make us more unique.”
