Pin Kegs are used in traditional and contemporary cask ale serving. Here's how the process works:

1. Cask Conditioning

Cask ale, which is often served from a Pin Keg, undergoes a secondary fermentation process in the cask itself. This means that after the beer is brewed and cooled, additional yeast and sugars are added to the keg, allowing it to ferment slowly. This natural fermentation continues until the beer is ready for serving, enhancing the flavors and creating a unique profile.

2. Serving

When ready to serve, the beer is tapped directly from the Pin Keg without the need for additional CO2 pressure, allowing for a more natural carbonation. The cask is often kept at cellar temperature (around 50–55°F), which brings out the complex flavors of the beer.
