Our Kimchi Sour came from a simple idea: take the tangy, spicy essence of kimchi and turn it into a beer. We knew it wouldn’t be easy, but that’s what makes it exciting. Using our brewer’s own kimchi culture, we worked through several batches until we hit just the right mix of flavors. We wanted the beer to embody the sharp, refreshing taste of ginger upfront, followed by a bold, spicy finish thanks to gochugaru (Korean sun-dried chili peppers).
